Creamy Sweet Potato Chicken Soup
serves 4
Ingredients
- 1 lb chicken, cooked
- 1 C sweet onion, diced
- 3 ea carrots, diced
- 1 ea celery stalk, diced
- 4 C chicken stock
- 1 lb sweet potato, diced
- 2 t oregano
- 2 t coriander
- 4 C spinach
- 1/2 C half-and-half
Instructions
- Saute the onion, carrots and celery until translucent. Add the stock, sweet potato, oregano and coriander. Simmer until the potato is tender.
- Add the chicken and spinach and simmer until the spinach is fully wilted. Stir in the half-and-half and season to taste.
- Plate and serve hot.
